Shannon was an outstanding member of the School of Natural Resources community. She had an intense calling to environmental, sustainable agriculture, and animal rights causes. Her research interests centered on motivational factors that cause people to participate in local food and sustainable agriculture.
Shannon was a superior scholar and received countless awards and recognitions, among them the UNL Chancellor's Fellowship, the Holling Teaching award, and she was a Fulbright Scholarship nominee. She was active in SNR Graduate Student Association, taught courses in SNR, and was an advisor on numerous undergraduate theses.
Within the greater Lincoln community, she was a founding board member and past president of Nebraska Food Cooperative. Shannon co-owned Green School Farms with her husband. She served on the advisory board for SARE's Professional Development Program, and volunteered for Wachiska Audubon Society.

Eligibility
Eligibility to apply for the Moncure Scholarship is determined by:
- Human Dimension Specialization in the Natural Resource Sciences graduate program: All students currently in the Human Dimension specialization are eligible
- Credit Hours Completed: Students must have completed 9 hours of graduate credit at UNL by December 31
